What You Need :
- 3/4 cup warm to hot water
- 2 tablespoons butter, melted, or softened
- 1 teaspoon sugar
- 2-1/2 cups all purpose flour
- 1 tablespoon yeast
- 1 tablespoon cornmeal
- 1/2 teaspoon salt
- 1 cup pizza sauce
- 1 cup mushrooms, your choice, chopped
- 16 ounces mozzarella cheese, shredded
- 1/4 teaspoon oregano
- 1/8 teaspoon basil
- 1/4 teaspoon black ground pepper
- 2 tablespoons parmesan cheese, shredded
Combine the water, butter, and sugar in a large mixing bowl. Add half of the flour and stir well. Add the rest of the flour along with the yeast and mix well until a dough begins to form.
Knead the dough for 8 to 10 minutes or until it is smooth, elastic, and no longer sticks to your hands. You may need to add a few sprinkles of flour to the dough while kneading until it reaches the right doughy consistency.
Spread some melted butter on top of the dough ball and place in a bowl. Cover the bowl with a towel or plastic wrap and allow to rise for 45 minutes to an hour.
Preheat the oven to 400 degrees Fahrenheit.
After the dough rises, punch it down flat and knead for a few minutes to remove any trapped air bubbles. Form the dough back into a ball and allow to rise again covered in the bowl for another 15 minutes.
Liberally coat a 16 inch pizza pan with melted or softened butter and press the dough down onto the pan. Lift half of the dough up and sprinkle half of the cornmeal on the pan. Repeat with the other side.
Sprinkle the salt all over the pizza dough and then spread the sauce evenly. Add the chopped mushrooms to the pizza, the mozzarella cheeses, and then the seasonings. Sprinkle the parmesan cheese on top and bake in the lower third of the oven for 10 minutes.
Rotate the pizza completely and bake for another 3 to 5 minutes or until the top is browned.
Turn the oven off, open the door, and leave the pizza sitting on the rack for a few minutes or until ready to serve.
Yields about 12 slices to serve 2 to 3 people.
